Thai Fried Rice



Yesterday, as I was perusing through my refrigerator, I noticed how much leftover meat and vegetables I had from our recent camping trip.  I thought what better way to use up these ingredients than to stir fry them into a Thai Fried Rice?

I apologize that I didn't take much photos of the process but this is how I made it:

Ingredients:
  • 1 1/2 cups cooked jasmine rice 
  • Olive oil
  • 1 lb shrimp                                     
  • 1 lb chopped or sliced Chinese sausage
  • 1 tsp. curry powder
  • 1 cup chopped or thinly sliced yellow onion
  • chopped bell pepper
  • chopped mushroom
  • 1 ½ Tb. fresh minced ginger
  • 2-3 garlic cloves, minced
  • 1 cup frozen peas and carrots medley
  • 1/3 cup chopped cilantro or basil
  • ½ lime, juiced
  • 1-3 Tb. soy sauce
  • 4 eggs
  • Tomato wedges and sliced cucumber for garnish

Directions:
  • Precook the jasmine rice according to package instructions.
  • Add the olive oil to a large skillet or wok. Heat the skillet to high heat. When the oil begins to smoke, add the shrimp, sausage and curry powder and cook 2 minutes
  • Add the yellow onions into the pan and cook another minute. Add the ginger and garlic along with a couple pinches of salt —and cook 1 more minute.
  • Add another tablespoon of oil to the pan if needed, followed by the cooked rice. Stir well.
  • Add the peas, pineapple, green onions and cilantro and stir again. Squeeze the lime juice over the rice and add the soy sauce to taste. Stir and cook another minute or two, until the peas have warmed through.
  • Push the rice mixture to one side of the pan and crack the eggs in the open space.  Scramble the eggs.
  • Once the eggs have cooked, mix it in with the rice mixture.
  • Serve the fried rice with a side a tomato wedge and sliced cucumbers and enjoy!
